經濟部商業司2015年5月的資料顯示我國的餐飲業營業額保持穩定的成長,2014年餐飲業營業額已超過4100億元新台幣,可見餐飲業對台灣的經濟影響具有相當的程度,而在台灣的餐飲業經營中,加盟連鎖是許多企業擴展事業版圖主要的方式,連鎖體系營運的穩健程度亦是企業發展重要因素,因此加盟者的表現固然會成為總部營運的關鍵。 為使總部能夠有一個適合評選加盟者之依據,本研究以台灣的連鎖餐飲品牌為研究對象,整理過去相關研究,建構出連鎖餐飲業加盟者評估指標,透過網路程序分析法及專家問卷的應用取得權重後發展加盟評估量表,並比較層級分析法及網路分析程序法之結果,研究結果可為加盟總部應用於決策者們評選加盟主時能有共識且有具體的參考,以避免後續因雙方認知差異所發生的糾紛,協助總部擴大事業版圖。
According to the data from Ministry of Economic Affairs in May 2015 the total revenue of food and beverage industry maintain stable growth. In 2014, the total revenue of food and beverage industry has been over 140 billion New Taiwan dollar, equal to 4.6 billion US dollar. This shows the food and beverage industry has an impact on the economy of Taiwan. However, “Franchising mechanism” becomes the business expanding strategy for those food and beverage enterprises in Taiwan. How to build a stable chain system will be important for those headquarters and the franchisee’s operation performance was based on the stable chain system. In order to supply headquarter with a specific reference basis while selecting the new franchisees. This research subject in this study is the chain enterprise of Taiwan food and beverage brand. This study adopts related researches as reference to build up a franchise assessment tool. Get the weights for franchise assessment tool by applying Analytical Network Process and Q&A with experts. At the end compare the results between Analytic Hierarchy Process and Analytical Network Process. The result of this study may provide the decision-makers to reach agreement and have specific reference. Headquarter can reduce the occurrence of conflicts, and extend his business by applying this franchise assessment tool.
