本研究旨在瞭解大學生的營養知識、態度及飲食行為之現況,並探討不同家庭社經背景的大學生在養知識、態度及飲食行為知差異情形,最後探討三者間的交互關係。本研究共計發放問卷700份,回收有效問卷回收數為577,有效問卷回收率達82.6%。所得資料以描述性統計獨立樣本t 檢定、單因子變異數分析、皮爾遜積差相關分析後,研究結果為:一、營養知識、營養態度及飲食行為呈正向中上程度得分。二、「民生學院」的學生在營養態度整體及各分構面上明顯優於其他學院的學生;家庭型態為核心家庭(雙親)的學生在營養態度之「飲食價值觀」構面上明顯優於單親家庭的學生;住宿自家的學生在營養態度之「進食與健康」構面上明顯優於校外租屋的學生;大四學生在「均衡飲食行為」及「注意標示與包裝」飲食行為分構面上明顯優於大一學生,而大一學生在「情緒性進食行為」分構面上則明顯優於大四學生;住宿情形為自家的學生在飲食行為之「均衡飲食行為」及「情緒性進食行為」構面上明顯優於住學校宿舍及校外租屋的學生。三、大學生營養知識、態度與飲食行為之關係呈正向相關性。
This study aimed to examine University student’s proper nutritional knowledge, attitude and dietary practice, their demographic statistic differences, the affecting factors and interaction among the three attributes. Quota sampling method was used to distribute 700 copies of self-edited questionnaires,and with 577 effective data or 82.6% response rate. The data were analyzed with descriptive statistical analysis, t-test analysis, One-way Anova, Pearson’s product-moment correlation coefficient analysis. The results were:1. University students overall dietary attitude showed positive attitude on nutritional knowledge, nutritional attitude and dietary practice. The College of Human Ecology universities were better than other College’s student on nutritional attitude;The nuclear family’s student were better than single parent on “dietary values”;Live their own’s student were better than Renting on“eating and health”; University of fourth graders were better than Freshman on“balanced diet”&“labeling and packaging”;Freshman were better than fourth graders on“Emotional Eating behavior”;Live their own’s student were better than Renting and School dormitory on “balanced diet”&“Emotional Eating behavior”. The result of University student’s nutritional knowledge, attitude and dietary practice showed significant relation.
