本實驗之主要目的為建置中溫噴霧乾燥系統,以噴霧乾燥法來進行 對Lactobacillus acidophilus、Bifidobacterium bifidum以及Bacillus coagulans之乾燥。實驗裝置包含空壓機,冷凍除濕裝置,乾燥過濾裝置等。本研究探討進氣溫、濕度、壓力等操作因子,對菌體存活率與乾燥速率之影響。實驗測試結果顯示使用脫脂奶粉培養乳酸菌,並配合賦形劑進行乾燥,在噴霧乾燥下,B菌雖然沒有很明顯的成果,但是B菌在噴霧乾燥之製程上,卻沒造成乳酸菌的死亡,則A菌仍有進步的空間,未來還有許多方面可以改善,並應用於大量乳酸菌發酵製程上。
The goal of this research is to establish a spray drying unit that dries the fermentation broth of lactic acid bacteria (LAB), mainly Lactobacillus acidophilus, Bifidobacterium bifidum, and Bacillus coagulans, at temperature near 35℃.The drying process is designed to operate in a manner of producing air / liquid cross-flow at high speed. The system comprises a condensing drying unit that produces dry air, a column packed with desiccator, a serial air filter and the designed cross-flow spray head. The drying unit was used to spray dry the LAB fermentation broth while monitoring humidity and temperature at various location of the system. Test results showed that such drying method is feasible in fast drying of LAB fermentation broth while maintaining viability of the bacteria. Although, there is much room for improving the cross-flow spray head, this research showed that the method is feasible for industrial production.
