中文摘要 異麥芽寡糖(IMO)能有效的促進人體腸道內乳酸菌和雙歧桿菌的繁殖,增進人體健康。本研究是利用酵母菌去除市售的低純度異麥芽寡糖漿中的葡萄糖和麥芽糖等消化性糖,以生產高純度異麥芽寡糖。高純度異麥芽寡糖的熱量極低,而且糖尿病患者可能可以食用。 於五公升的生物反應槽中,將低純度異麥芽寡糖漿稀釋至15%(w/v),添加酵母萃取物,接種酵母菌,醱酵條件為:操作體積3公升、通氣速率1 vvm、攪拌速度400 rpm、溫度30°C、pH控制於6。分別利用啤酒酵母以及麵包酵母兩種酵母菌做比較。醱酵進行48小時,葡萄糖可完全去除,麥芽糖則各減少83.2%、84.3%,高純度異麥芽寡糖的含量分別提高至94.7%及96.8%(以乾重計算)。
Abstract Isomalto-oligosaccharide (IMO) can stimulate the proliferation of lactic acid bacteria and bifidobacteria in the intestines to promote human health. In this study, low-content IMO was fermented with yeast to remove digestible sugars including glucose and maltose, resulting in high-content IMO syrup. The high-content IMO is low in calorie and might be ingestible for the people suffered from diabetic. The fermentation was carried out in a 5-liter bioreactor with the culture medium containing 15% (w/v) of low-content IMO and yeast extract. The fermentation conditions were: working volume 3 liter, aeration 1 vvm, agitation 400 rpm, temperature 30°C and pH was controlled at 6. Two strains, a beer yeast and a bread yeast, were compared in the fermentation to produce high-content IMO. After 48 hours of fermentation, all glucose was removed and 83.2% and 84.3%, respectively, of original maltose were eliminated. The resulted high-content IMO were 94.7% and 96.8% on a dry weight basis, respectively.
