台灣地區豬肉需求之估計－以台中市、台南市及高雄市為例

為了探討不同地區，對於豬肉丸消費需求是否會不同，本文以最小平方法，分別估計台中市、台南市及高雄市的豬肉需求方程式，並檢視個別地區是否會因地區的所得成長之不同，而產生不同的估計結果，最後再估計各地區豬肉之需求彈性，以瞭解居住於不同地區之國內消費者對於豬肉會產生何種需求現象。本文使用台中市、台南市及高雄市之1979年1月至2006年12月之月資料進行相關實證研究。實證結果顯示，三個地區之豬肉需求自身價格彈性均為負值，且彈性小於1，雖然三個地區的結果只有高雄市具有顯著性，但仍符合需求法則。至於雞肉與牛肉之價格交叉彈性，三個地區則呈現不同的關係，互補或替代關係均有。另由所得成長率估計結果，也發現三個地區對於豬肉之消費均會隨所得成長率的提高而增加，只是增加之幅度並不大，顯示豬肉對三個地區的消費者而言，仍屬必需品。

In order to investigate the consuming demand of pork in different areas, the article used ordinary least squares method to estimate the formula of pork demanding in Taichung City, Tainan City and Kaohsiung City. In addition, the estimated results in different areas were reviewed to check the variance between the demand and the income in different areas. Finally, the demand of elasticity in different areas was estimated in order to understand what kind of demand phenomenon for domestic consumers. This study used data of Taichung City, Tainan City and Kaohsiung City from Jan 1979 to December 2006 to conduct an evidence base medicine. The results showed that the elasticity of self-price of the demand of pork in three different areas were negative; the elasticity was less than 1. Although only the result in Kaohsiung City was significant, the results in three areas still fitted the law of demand. The cross elasticity of chick and beef price in three areas showed different relationships, either complementary or substitution. In addition, when the income growth rate was used to estimate the results, the demand of pork in three areas increased when the income growth rate increased as well, although the increase rate is very mild. Nevertheless, the results showed that pork was still an essential thing for the consumers in the three areas.
