To present a good fresh-tasting product to the consumer, the conditions created in the coldstore must be matained continuously until the product reaches the cousumer. This is called the ”cold chain”. Well designed equiment must be used at every stage the coldstore, the transport medimun, the wholesaler, the supermarket and the household. Storage temperature can be selected in a range from above freezing to below freezing depending on lie storage time required. In the upper range we speak of refrigerating in the lower range of deep freezing. Refrigeration is not a goal in itself but simply a means of prolonging the usable life of good. Therefore some freezing equipments and special food preservation methods will be discussed.
