  • 本研究目的在瞭解科技公司職員蔬果攝取行為現況,並探討個人背景因素、社會心理因素、環境因素與蔬果攝取行為之間的關係。以臺北市某科技公司職員為研究對象,於民國99年9月進行正式問卷調查,10月初收回問卷,得有效樣本310人,所得資料以t檢定、單因子變異數分析、皮爾森積差相關以及複迴歸分析等統計方法進行分析,重要結果歸納如下:
    一、近三成的研究對象有每天攝取三份蔬菜,近二成的研究對象有每日攝取二份水果。
    二、研究對象的「自覺健康狀況」愈好,其蔬果攝取行為愈佳。
    三、研究對象之蔬果的喜好、蔬果攝取結果期望、蔬果攝取自我效能、蔬果攝取社會支持、蔬果可獲性皆與蔬果攝取行為間呈現正相關。
    四、研究對象的個人背景因素(性別、年齡、婚姻狀況、教育程度、自覺體型、自覺健康狀況)、社會心理因素(蔬果的喜好、蔬果攝取結果期望、蔬果攝取自我效能、蔬果攝取社會支持)及環境因素(家中、職場、其他飲食場所蔬果可獲性)等變項,共可解釋研究對象之蔬果攝取行為63.4%的變異量(Adj R2=0.634,F=30.717,p<.001)。其中以蔬果攝取自我效能對蔬果攝取行為的影響力最大。
    最後,依據研究結果,對職場健康促進與未來研究提出建議。

    The purpose of this study is to investigate the current vegetable and fruit intake behavior of the employees of a science and technology company, and to inquire personal background factors, social psychology factors and social environment factors in relationship with vegetable and fruit intake behavior. The sample of questionnaire survey included 310 employees of a science and technology company. Inquisition period from September to October in 2010. t-test, One Way ANOVA, Pearson’s Product-moment Correlation and Multiple Regression were used to analyze the data and results were as follows:
    1. About 30% of subjects consume 3 portions of vegetable a day. About 20% of subjects consume 2 portions of fruit a day.
    2. Subjects who perceive their health status to be better are more likely to eat vegetable and fruit.
    3. Vegetable and fruit intake behavior was positively correlated with Preferences, Outcome expectancy, Self-efficacy and Social support.
    4. 63.4% variance (Adj R2=0.634,F=30.717,p<.001) of vegetable and fruit intake behavior could be explained by personal background factors (Age, Sex, Education, Marriage, Subjects who perceive their health status, Subjects who perceive their shape), social psychology factors (Preferences, Outcome expectancy, Self-efficacy and Social support of Vegetable and fruit intake) and social environment factors (Home, Office and Other place avaliability). The strongest predictor of vegetable and fruit intake behavior was Self-efficacy.
    Finally, these results were discussed and applied in the practical experience and future studies.
