  • 近年來台灣觀光產業蓬勃發展,其中餐飲在旅行中為重要的一環。而廚師對於餐飲之影響甚鉅。有鑒於此,本研究主要目的在探討廚師不同的人格特質與主廚不同的領導風格對廚師專業管理職能的影響,並以學習取向為中介變項。
    本研究利用調查法,以「人格特質」、「自我效能」與「領導風格」做為自變項,「學習取向」為中介變項,探討廚師專業管理職能。研究樣本為餐廳與旅館內場主廚之外的所有廚師,所蒐集的資料利用SPSS 17.0 套裝軟體做為資料分析工具。
    480份問卷中,有效問卷共計400份,利用多元迴歸分析後,研究結果發現:(1) 廚師的人格特質與主廚不同領導風格會顯著影響其學習取向。(2) 廚師人格特質除親和性與神經質外對廚師專業職能表現皆有顯著影響。(3) 主廚領導風格對學習取向與廚師專業職能表現皆有顯著影響。(4) 廚師的自我效能對學習取向與廚師專業管理職能皆有顯著影響。(5) 學習取向中的深層學習對廚師職能有顯著影響。(6) 學習取向在廚師人格特質、自我效能、主廚領導風格與廚師專業職能表現間具有中介效果。

    The tourism industry in Taiwan has a vigorous development. When it comes to tourism, we can’t talk without food and beverage. More important, cook’s competences have a great connection with food and beverage. Hence, the research purpose of this thesis is to analyze the influence of the personality and chef’s different leader style on cook’s professional managerial competences, and learning approach as mediator.
    The study is a survey research, using personality, leader style as independent variables and learning approach as mediator aims to investigate the effects on cook’s professional managerial competences. The samples are cook’s in the culinary underbelly without chef. Data was analyzed by SPSS 17.0.
    Totally 480 questionnaires were distributed, and 400 are valid, after the Hierarchical Multiple Regression analysis, the findings of the study are follows: (1) Different personality of the cooks and Chef’s leader style will significant influence cook’s learning approaches. (2) Different personality of the cooks except agreeableness and neuroticism significant influence cook’s professional competences. (3) Chef’s leader style significant influence both learning approaches and cook’s professional competences. (4) Self-efficacy of the cook’s significant influence both learning approaches and cook’s professional competences. (5) Deep learning significant influence cook’s professional competences. (6) Learning approach has mediating effects between all the independent variables and dependent variable.
