台灣近幾年餐飲業蓬勃發展,餐飲業衍生出的環境議題也不少,本研究希望能提供一個參考標準及知識給產業界,使有環保概念的餐飲業有更多的實際作為;給予消費者一個選擇綠色餐廳的依據;同時也提供政府官員在推行綠色餐廳時,有一個實際能夠評量的指標,增加綠色餐廳的可行性及可信度。在經由兩回合的德菲法及深入訪談後,建構出綠色餐廳環境管理系統認證指標可分為六大構面:能源、水資源、固體廢棄物、綠色採購、環境政策和污染防制,共34項指標內容。在執行綠色餐廳認證之最大影響因素則有:政府法規、業主認知、及社會風氣三大因素。因此建議政府在推行綠色餐廳時,除了輔導加強業者環保觀念外,還可建立獎勵措施和標章制度來增加推行的可行性。另外,最重要的還是需要增強大眾對於環境保護的概念,形成風氣後,才能使業者主動推行綠色餐廳。
The food and beverage business has been highly blooming recently in Taiwan, so the reason causes many problems of environmental pollution now. The three purposes of this study were to provide standard and knowledge of environmental protection for food and beverage industry, to provide consumers standard for choosing a green restaurant, and to provide government an evaluation system of conducting the green restaurant. After by using two rounds of Delphi method and in-deep interview, this study comprised 6 aspects and 34 indexes which including energy resources, water resources, solid wastes, green purchasing, environmental policy, and pollution prevention. The most three important factors when conducting the green restaurant identification included government regulations, owner awareness and social aspects. Besides, one of other important things in this study was to enhance people conscious of environmental protection and increase owners wellness to conduct the policy of green restaurant.
