幾丁聚醣分子量在500,000至1,000,000之間,去乙醯度70至95%,均可溶於2 % w/v之醋酸、蘋果酸、乳酸、琥珀酸、抗壞血酸等有機酸溶液。以鹼溶液加入幾丁聚醣溶液,形成為透明度與軟硬度不同之膠體。本研究六種有機酸形成膠體的狀態,CA(檸檬酸)、OA(草酸)、SA(丁二酸)、TA(酒石酸)、PA(丙酸)形成的膠體呈現混濁狀態。AA(醋酸)於27℃下震盪和攪拌或40℃震盪和攪拌,都能達到混合均勻的效果。而取2.5g 幾丁聚醣加入濃度1N不同有機酸,與1N NaOH混合,形成的膠體pH值接近於7.0;1N 醋酸加0.88N NaOH之pH值為5.12,最適合形成膠體及具有抑菌效果。
