食物代換表2018年版修訂紀要

A Process Document for the 2018 Taiwan Food Exchange Lists

摘要


2017年3月至12月接受衛生福利部國民健康署委託,修訂多年未變動的「食物代換表」。以「臺灣地區食品營養成分資料庫2016年版」為基準,配合飲食指南及指標中食物六大類,依照不同類別食物主要提供的能量營養素為準,計算其餘熱量營養素及每份重量。若計算出之每份重量與現行食物代換表重量差距達15%以上,則進行修訂。另外,若國人常食用之食物在食品營養成分資料庫中從缺者,則採買此項食物後委託食品工業發展研究所分析三大熱量營養素、水分及灰分含量。結果總共分析三百個樣品,其中包括乳品類17項、全榖雜糧類51項、豆魚蛋肉類71項、水果類59項、蔬菜類12項、油脂類9項及其他類81項。此次修訂針對臺灣地區食品營養成分資料庫及檢驗報告作出數字上的微調,另外,為符合飲食指南之原則,食物代換表中同類食物項目歸類及排序調動,原態食物次序往前,加工食品排序往後挪移。修訂後之資料已上網公告。

"Taiwan Food Exchange Lists" was revised in 2017, sponsored by the Health Promotion Administration, Ministry of Health and Welfare and based on the "Taiwan Food Composition Databases 2016 Edition", Ministry of Health and Welfare and the Food Industry Research and Development Institute (FIRDI). It was also link up the six food groups in the 2018 Taiwan Dietary Guidelines, as well as the main energy nutrients (carbohydrate, protein or fat weight) contained by different group of foods. Compared the major energy nutrient of each food group, if the newly calculated portion size of a food item was off more than 15% of the weight from the current food exchange list, revision would be proceeded. In addition, if foods were common to the Taiwanese but missed from the Food Composition Database, food samples would be entrusted to the FIRDI to determine its three major energy nutrients, moisture and ash content. A total of 300 samples were analyzed, including 17 dairy products, 51 grains and starchy vegetables, 71 beans, fish, eggs and meat, 59 fruits, 12 vegetables, 9 fats, oil, nut and seeds and 81 others. Based on the Taiwan Food Composition Databases and the analysis results, some minor adjustments had made. Furthermore, the order of foods in the same food group had also been rearranged to line up with the principles of dietary guidelines, raw foods go first and processed foods to the back of the list. The 2018 Taiwan Food Exchange Lists has been published on line by the government.
