以模擬技術評估及改善豬隻屠宰場作業動線-以臺灣中部某豬隻屠宰場為例

Evaluating and Modeling the Flow Line and Operations of a Real Swine Abattoir in Central Taiwan: A Simulation Study

摘要


以往對豬隻屠宰作業的研究大都聚焦於單一操作點之管理與清潔度之要求,然而,對於屠宰全程各作業點進行整體效能評估管控,可間接減少屠商成本支出、提高產能,而使得屠宰產業更具市場競爭性。運用模擬技術來預先評估作業規劃方案的可行性將可協助達成上述目標。此篇研究中,以Flexsim模擬軟體實地量測評估臺灣中部一家豬隻屠宰場之動線產能模式,結果發現該屠宰線目前無作業瓶頸點存在,且部分工作站閒置時間過長,建議可減少4名作業員減少成本支出,或以同樣人力於相同作業時距內可增屠100頭豬隻。若以增加屠體品質之需要考量,在維持相同人力及機械傳動速度下,將現有頸動脈放血時間再增長200秒充分放血,亦不會減少整體作業線輸出終產能。此模擬技術運用於屠宰產業,將可提供業者評估合適之作業動線及器械規劃,藉以有效提升整體產能並可增加屠體品質。

Traditionally, research on improving swine slaughtering processes has focused on a single operation point and its hygiene. However, effective control on the whole processing flow enables slaughter industries to be more competitive in the market by reducing costs as well as increasing productivity. Simulation can assist in moving towards these goals by evaluating the feasibility of alternative control policies for managing a swine abattoir. In this current study, a commercial simulation package, Flexsim, was employed for constructing a simulation model for a commercial swine abattoir in central Taiwan. According to the model, no bottleneck exists within the processing flow and a low percentage of productivity was shown at certain operation points. Therefore, to improve efficacy, it was suggested that 4 workers could be reduced or slaughter of 100 carcasses could be increased within the same processing period. Furthermore, in order to improve carcass quality, extending another 200 seconds of bleeding would not affect final slaughter productivity. This simulation model has successfully provided industries an improved operator assignment and operation flow as well as further increasing their productivity.
