The paper utilized econometric model to investigate the shift in consumer preferences for the staple food in Taiwan. The first differential LA/AIDS model was used to estimate structural change of staple food (including rice, flour and starchy roots). The prices and quantities data between 1976 and 2005 are used. The likelihood ratio tests indicate that people's consumption behavior of the staple food have changed over time in response to not only the change of food price and the increase in average income but also consumers' preference structure for the staple food. The shifts including intercept and price parameter in demand function were gradually changed from 1985 to 1995.
