食用油脂部分氫化-模型研究

摘要


自製之亞麻仁油酸甲酯及次亞麻仁油酸甲酯被作為研究食用油脂部分氫化的實驗模型。在本實驗中,取此二種不飽和酸之正己烷溶液從事高壓氫化反應,改變不同之反應條件,包括銅鎳二種觸媒之比例,氫氣壓力,溫度、反應時間及甲酯濃度等,並分析生成物中各種不同脂肪酸之百分比例以及具反式雙鍵和共軛雙鍵酯肪酸之總量。如此,催化劑之活性,對氫化反應之選擇性及雙鍵異構化之過程均可測定。

Methyl linoleate and methyl linolenate prepared in this laboratory were selected as models for the study of the hydrogenation of edible oils. Thus, n-hexane solutions of methyl esters were placed in a high pressure reactor and subjected to hydrogenation. By varying the reaction conditions, including the ratio of the two catalysts-copper chromite catalyst and nickel catalyst, hydrogen pressure, temperature, reaction time, and the concentration of the methyl esters, the percentages of various fatty acids in the products and the quantities of the acids with trans double bonds and conjugated double bonds were analyzed. Thus, the reactivities of the catalysts, the selectivity of hydrogenation, and the isomerization of the double bonds were determined.
