甘藷塊根與莖葉之蛋白質及胺基酸組成

Protein Content and Amino Acid Composition in Tubers and Stems and Leaves of Sweetpotato Cultivars

七個塊根用甘藷品種(系)與兩個莖葉用品種(系)於1973年與1977年在嘉義農業試驗分所栽植,並分析其蛋白質含量與胺基酸組成。塊根用品種(系)之塊根蛋白質含量在3.20~7.27%之間,兩個莖葉用品系有效莖葉內之蛋白質含量分別為10.76%(HP-4)與13.22%(臺農25號)。離胺酸(Lysine)含量以g/100g Protein表示時,在七種甘藷塊根內為3.19~5.52%,HP-18為4.93%。在有效莖葉內,HP-4為3.31%,臺農25號為4.33%。經分析甘藷塊根與莖葉內胺基酸組成,並與FAO規定蛋白質中重要胺基酸含量標準比較,除酥胺酸(Tyrosine)與含硫胺基酸(Total sulfur-containing amino acids)之含量為限制因子外,其餘重要胺基酸之含量則均能符合需要。

Nine cultivars or lines of sweetpotato were grown at Chiayi, Taiwan in 1975 and 1977 and their protein contents and amino acid composition were determined in tuber roots and effective leaves and stems. Protein contents in tuber roots of seven sweetpotato cultivars or lines ranged from 3.20 to 7.27%, protein content in effective leaves and stems was 10.76% for line HP-4 and 13.22% for cultivar Tainung 25. Lysine contents, on a g/100g protein basis, ranged from 3.19 to 5.52% in the tuber roots and was 4.93% for the newly-developed high protein line HP-18. Respective values in the effective leaves and stems of HP-4 and Tainung 25 were 3.31 and 4.33%. Total sulfur-containing amino acids and tyrosine were limiting by comparison with the FAO reference protein. Other essential amino acids were in excess suggesting that sweetpotato protein may be useful in supplementing other plant proteins.
