老年人飲食習慣之研究

A Survey of Food Habits of the Elderly in Taipei-1977

摘要


“預防勝於治療”,積二十餘年在醫院為病患作飲食治療之經驗,確信早期校正不良飲食習慣為慢性生理病之重要預防措施,近年來台灣地區十大死亡病因之變化趨勢,慢性病死亡率續增,更堅定著者此一信念,決定作老年人飲食習慣調查,瞭解實況,以定營養教育目標。此次調查係採隨意選樣問卷式訪問調查,由具備膳食調查訓練之大專學生自選六十五歲以上老年人訪問,共計訪問334位,依被調查者性別、健康情況,及籍貫分析其口味喜好及對食物選擇之資料,最顯著之結果為1/3以上老年人不吃牛奶,老年人普遍喜好鹹味,對鹹腐乳有獨特之愛好,尤以台灣、福建及四川籍者喜好百分率更高。 由統計結果發現傳統地域性飲食習慣對個人食物選擇行為之影響遠勝過個人健康情況之影響,例如醫囑低納飲食治療之心血管性病患獨愛醬菜及腐乳,糖尿病患常以汽水及果汁爲飲料等。

Prevention is better than cure. The prominent increase of the death rate due to chronic diseases motivates the inspiration of seeking some preventive measure in improving the nutritional status through changing food habits. A survey of food habits of the elderly in Taipei was carried out in fall 1977, 334 elderly over 65 were randomly selected and interviewed by college students with experience in dietary survey. Subjects' age, sex, health status, snack habits, flavoring favorites and daily food choice were recorded and analyzed. Information obtained in this study indicated that their snack habits, flavor favorites and daily food choice were more closely related with the traditional food habits of their birth places than their own health status. More than one third of the elderly did not drink milk. Fermented soybean curd was the most favorite of those elderly from Taiwan, Fu-Chien, and Tze-Chuan Provinces. Even patients with hypertension also chose fermented soybean curd and pickled vegetables as their favorites. Poor food habits have a more direct influence on eating behavior than does knowledge. A well planned nutrition education program is needed for the improvement of nutrition.
