本研究之目的,為探討高雄地區孕婦之膳食攝食狀況,並評估其各營養素之攝取情形。於民國七十九年七月至十月期間,以高雄市立婦幼綜合醫院門診之孕婦326名;其中第一期74名,第二期113名,第三期139名,進行問卷調查,以24小時回憶法來評估研究對象平均每人每日各營養素之攝取,並與行政院衛生署於民國七十五年修訂之“每日營養素建議攝取量”比較,結果如下: 高雄地區孕婦平均每人每日之熱量攝取量為2103大卡;蛋白質85.1克,佔總熱量之16.2 %,其中動物性蛋白質53.4克,為總蛋白質量之63.1%;脂肪95.9克,佔總熱量之41.0%,其中動物性脂肪為53.5克,佔總脂肪量之56.0%。其他營養素的攝取量為核黃素1.4毫克、磷1224毫克、硫胺素1.25毫克、維生素C 211毫克(烹飪時之損失未予考慮),菸鹼素13.8毫克,菸鹼素當量28.4毫克,以上皆達建議量,而鐵18.9毫克,其中動物性來源佔44.4%、維生素A 5863國際單位、鈣730毫克則未達建議量。 孕婦之教育程度,職業及家庭經濟狀況對營養素攝取的影響達顯著相關性。
The purpose of the study was to assess dietary status of pregnant women in Kaoshiung area, Taiwan. Twenty-four hour dietary recall method was used to assess dietary intakes of 326 pregnant women. Results indicated that the average calorie intake per person per day was 2103 Kcal and protein intake was 85.1 gm which provided 16.2% of the total energy of which 63.1% was animal origin. Average fat intake was 95.9 gm per person per day which provided 41.0% of the total energy of which 56.0% was animal origin. Iron intake was 18.9 mg, and riboflavin intake was 1.4 mg, which was close to or over the recommended daily nutrient allowance (RDNA). Vitamin A and calcium intake were lower than RDNA. The intakes of phosphrous, protein, niacin equivalent, thiamin, and vitamin C were all above the RDNA. Further, the educational status, occupation and family income of the subjects had significantly influences on their daily nutrient intakes.
