蛋白質的來源與含量對大鼠脂質與脂蛋白代謝的影響

Effects of Protein Sources and Levels on Lipid and Lipoprotein Metabolism in Rats

本研究的目的在探討飲食中不同的蛋白質來源(酪蛋白和大豆蛋白)與含量對大鼠脂質與脂蛋白代謝的影響。實驗採用48隻斷乳的雄性Wistar大鼠,分為六組,分別餵食低蛋白(10%)、適量蛋白(20%)及高蛋白(30%)含量的酪蛋白和大豆蛋白。經過四週的飼育後,20%及30%蛋白質組有較佳的體重增加。而當蛋白質含量為10%及20%,酪蛋白組的生長狀況較大豆蛋白者佳;在飼料利用率及肝重方面亦有相同結果。20%及30%大豆蛋白組的血漿總膽固醇及高密度脂蛋白膽固醇顯著低於等量酪蛋白組者,酪蛋白含量增加會提高血膽固醇濃度以及低密度脂蛋白膽固醇與高密度脂蛋白膽固醇的比值;大豆蛋白則有相反趨勢。蛋白質的種類與含量不影響脂蛋白中apoprotein B、A-IV 和E之分佈。這些結果顯示,飼料中不同種類與含量的蛋白質均可能對大鼠的生長及脂質代謝造成不同影響。

The purpose of this study was to investigate the effect of different types casein and soy protein) and levels of dietary protein on lipid and lipoprotein metabolism in rats. Fourty eight male weaning Wistar rats were divided into 6 groups and were fed diet with three levels (10,20 and 30%) of proteins from two sources (soy protein or casein) for 4 weeks. Rats ingested 20% nad 30% soy protein had higher body weight gain than 10% protein; in addition, the 10% and 20% casein groups had better body weight gain or growth than those of soy protein groups. The food efficiency and liver weight had the same values among 6 groups. The plasma total cholesterol and HDL-C (high density lipoprotein cholesterol) in 20% and 30% soy protein groups were significantly lower than those of corresponding casein groups. The plasma cholesterol levels and the ratio of LDL-C (low density lipoprotein cholesterol) to HDL-C tended to increase and decrease with increasing amount of casein and soy protein levels, respectively. Plasma apolipoprotein B、A-TV and E distribution in d<1.21 g/ml fraction were not influenced by the types and levels of dietary protein. The results suggest that different types and levels of protein would alter the growth, serum and liver lipid metabolism of rats.
