學校蔬食日之營養均衡性及午餐服務滿意度與認知度-以彰化沿海某國小為例

Study of the Nutritional Balance of a Meatless Day, and Cognition and Lunch Service Satisfaction towards School Lunch Meal Service: a Case Study from an Elementary School in a Coastal Area of Changhua County

摘要


學童因飲食不均造成體位異常而導致慢性病年輕化趨勢,為了解學校蔬食日對學童體位及其午餐服務滿意與認知度之影響,本研究以彰化沿海某國小高年級學童為研究對象,檢視營養午餐之菜單設計是否符合彰化縣各級學校午餐菜單審核原則,再以問卷調查「學童飲食喜好」、「午餐服務調查」、「蔬食日滿意度」與「蔬食日認知度」等項目,分別與性別及身體質量指數進行統計分析,共回收有效問卷94份。結果發現學校高年級學童過重及肥胖比例過高佔52%;經本研究發現,學校蔬食日與彰化縣各級學校午餐菜單審核原則相比後,三大營養素比例及膽固醇含量雖在建議範圍內,但熱量較建議量770大卡低且未精緻主食供應量低於建議量。學童在蔬食日的認知度越高其滿意度越高,若校方或老師加強營養教育,應可提升學童真正接受蔬食的意願。

An imbalanced diet among schoolchildren can cause abnormal body weight and increase the prevalence of chronic diseases. In order to understand the influence of a meatless day towards the body weight of schoolchildren, and nutrition cognition and satisfaction with the lunch service, the aim of this study was to investigate the content of the school lunch matched with principles of the school lunch program in elementary sixth year students in a Changhua County coastal area. A self-designed questionnaire was conducted to explore relationships of eating preferences, and satisfaction and acceptance of the lunch with nutritional cognition towards the meatless day among schoolchildren. We also collected information on gender, the body-mass index, and other anthropometric indicators. In total, 94 students were recruited. Fifty-two percent of students were found to be either overweight or obese. The percentages of macronutrients (protein, carbohydrates, and fat) and the amount of cholesterol met the guidelines of recommendations for Changhua County. However, total calories and non-refined grains were insufficient. In general, the greater cognition students had for the meatless day, the greater was their satisfactory response. If the school or teachers were to promote nutrition education, it should enhance the students' willingness to accept vegetables.
