營養均衡早餐意向之探討─以高雄市國中生為例

Research on the Balanced Breakfast Behavior and Intention ─A Case Study of Junior High School Students in Kaohsiung City

摘要

本研究針對高雄市國中學生營養均衡早餐之意向做調查，以計畫行為理論為基礎，採問卷調查法，抽取高雄市國中生1200位，回收1162份問卷，刪除25份作答不完整及無效問卷後，有效問卷共1137份，有效問卷率為97.84%。問卷數據以SPSS20.0中文版進行資料分析，並採用描述性統計、t檢定、單因子變異數分析、卡方檢定、相關分析、迴歸分析等統計方法。
依據分析結果發現，態度、主觀規範、知覺行為控制會因背景變項不同而有差異，國中生營養均衡早餐的態度、主觀規範及知覺行為控制和行為意向皆呈現顯著正相關，其中又以態度和知覺行為控制的影響較為顯著。
藉此研究結果可使家長了解國中生對於均衡飲食之認知情形，並提供教育單位作為推動營養均衡課程之參考，進而提醒政府相關部門對於食品原料安全之重視。

This study aimed to investigate the nutritionally balanced breakfast intentions of the junior high school students in Kaohsiung city. It was conducted on the basis of the theory of planned behavior via questionnarie survey method. The researcher selected 1200 participants from the junior high school students in Kaohsiung city. Among the 1200 questionnaire copies, only 1162 copies were returned. After deleting 25 incomplete and invalid copies, 1137 valid copies were analyzed with effective rate of 97.84%. The Statistics Software SPSS Chinese version 20.0 along with the statistical approaches including descriptive statistics, t-test, one-way ANOVA, χ2 test, Pearson's product-moment correlation and multiple regression analysis was used to analyse the quantitative data.
Based on the research findings, attitudes, subjective norms, perceived behavioral control and behavioral intentions varied with the demographic variables. Also, the results of path analysis indicated that there was a significant positive correlation among the junior high school students’ attitudes, subjective norms and perceived behavioral control toward nutritionally balanced breakfast. Above all, it had a significant impact on attitudes and perceived behavioral control.
The research results enabled parents to understand the cognitive situation of a balanced breakfast for junior high school students, providing the education authority to promote the nutritionally balanced courses, and reminding the governmental authority of concerns over food security.
