In this study, we use sodium alginate as the shell, lemon oil as the core to prepare the calcium alginate microcapsules encapsulated lemon oil by orifice method. Use various chloride and sulfate metal crosslinking to explore the influence of formability and average particle size, and explore the difference in release and the encapsulation efficiency. According to the results, using various cross-linking to appearance formability and average particle size has a little influence of microcapsule, the minimum particle size was 3.51±0.08μm and 3.13±0.20μm at calcium chloride and zinc sulfate. By release curve diagram, using calcium chloride and magnesium chloride crosslinking have better sustained-release effect.
