食安風暴的反思-餐飲品質管理之教案設計

Reflection on Food Safety Turmoil: Design and Sharing of Teaching Program on Food Quality Management

摘要


食安意外造成消費恐慌與不安,因此綠色環保與節能減碳等的觀念漸受到重視,許多研究指出消費者對食品的品質與安全日漸重視,若要有好的產品,需有好的品質管理。本教案以美國品質管理專家戴明提出之PDCA(又稱戴明環)為單元課程。設計以「諾瑪:米其林餐廳」一片為討論案例,諾瑪餐廳經營者追查發現中毒的原因,是海鮮淡菜的病毒問題,並非員工生病導致60多位顧客中毒,經營者尋找出問題與原因,並解決問題。本教案透過中毒事件讓學生了解與討論解決問題的主軸,擬定對策後,運用PDCA(戴明環)撰寫出維護餐飲品質重要的管理模式,並且分組報告。

The consumers supposedly increased their panic and anxiety against the food safety issue. The concept of environmental protection, energy saving, and carbon reduction, therefore, have been drawn increasingly attention. Many studies pointed out that consumers paid their more attention to the quality and safety of food. Obviously, a good product needs good quality management. The spirit of teaching program was based on Plan、Do、Check and Act, PDCA, or Deming cycle, by William Edwards Deming, a US quality management expert and designed the "NOMA: My Perfect Storm" as a case study. And the seafood mussel virus had been found as the major cause which leaded more than 60 customers poisoned rather than staff sickness after Norma restaurant operators traced carefully. The Norma operators found out the problems, and finally solved the problem. The finding results showed that the learners could understand completely and discuss the solution to the core problem through poisoned case. Then, use PDCA to write out the food quality management mode after formulating the countermeasures, and reported in groups.
