國宴菜單對多元文化教育的啟示

The Meaning of Multicultural Education Through the Cuisines of State Banquet

摘要


本文以內容分析方式探究國宴菜單,發現飲食文化關係著族群、國家的認同,飲食文化展現了人類生活方式與型態的變化,蘊涵了社會、經濟與文化的意義;「國宴菜單」隱含當時的文化與政治意涵,亦呈現多元飲食文化現象,可瞭解到飲食文化在多元文化教育的重要性,本文期待能從飲食文化角度去欣賞與珍惜臺灣所具有的多元性族群文化,進而發展創意產業,並以生態永續發展的思維開展多元文化教育。

This study used the content analysis to explore the symbolic meanings of the cuisines on state banquet. In Taiwan, food culture is influenced mainly by various racial and ethnic groups. At a state banquet in history, the cuisines usually imply the specific culture or multi-cultural meaning. The study found that to learn the food culture could lead to understand more about the relationship among racial groups and further to help the multicultural education. Multi-cultural exposure can increase creativity. The descendants should cherish not only the traditional culture but also the developed multi-culture.
