台灣青蔥抗氧化活性之研究

Studies on Antioxidant Activity of Welsh Onion (Allium fistulosum) in Taiwan

摘要


本研究針對台灣地區所栽培的青蔥,包括宜蘭三星鄉農會、台中大安鄉農會及彰化溪湖鎮農會所種植的青蔥抗氧化活性分析。試驗材料由上述三地區農會所提供之青蔥,分別取根、莖、葉等不同植物組織成分,以酒精進行成份萃取。首先進行試驗材料萃取及成份濃縮,並進行DPPH捕捉自由基能力、總酚類含量測定及總抗氧化能力TEAC測試,以評估試驗材料萃取成份之抗氧化活性。試驗結果顯示,DPPH捕捉自由基能力於每毫升所含每公克乾重的濃度(g dry weight / mL)下,蔥根部位以彰化地區(CAR)>三星地區(SAR)>台中地區(TAR),分別為66.39%、66.29%及62.74%;蔥白部位以三星地區(SAS)>台中地區(TAS)>彰化地區(CAS),分別為87.30%、83.42%及79.35%;而蔥葉部位則以三星地區(SAL)>台中地區(TAL)>彰化地區(CAL),分別為91.06%、90.25%及89.89%。台灣青蔥總酚類含量及總抗氧化能力以三星地區>台中地區>彰化地區,且在不同青蔥部位總酚類含量及總抗氧化能力比較,亦以蔥葉>蔥白>蔥根。

Studies on the Welsh onion which cultivates in view of Taiwan area, including the Yilan Sunshin area farmer's association, the Taichung Daan area farmer's association and the Changhua Xihu area farmer's association plants the Welsh onion antioxidant activity analysis. The experimental material provides the Welsh onion by above three local peasant association, takes the root, the stem, the leaf separately and so on different plant tissue ingredient, carries on the ingredient extract by the ethyl alcohol. First carries on the experimental material extract and the ingredient concentration, and carries on the DPPH free radical scavenging capability, the total phenolic content determination and the total antioxidant activity TEAC test, appraises antioxidation of activeness the experimental material extract ingredient.The result showed that the DPPH free radical scavenging capability when the concentration of every gram dry weight per mL (g dry weight / mL) of roots of Welsh onion were Changhua (CAR) > Sunshin (SAR) > Taichung (TAR), the scavenging ability is 66.39%, 66.29% and 62.74%, respectively. The stems of Welsh onion were SAS > TAS > CAS, the scavenging ability is 87.30%, 83.42% and 79.35%, respectively. The leaves of Welsh onion were SAL > TAL > CAL, the scavenging ability is 91.06%, 90.25% and 89.89%, respectively. Compare of the total phenolic content and TEAC (Trolox equivalent antioxidant capacity) of different Welsh onion in Taiwan was Sunshin area > Taichung area > Changhua area. Compare of the total phenolic content and TEAC (Trolox equivalent antioxidant capacity) of different Welsh onion tissue was onion's leaf > onion's stem > onion's root.
