101年度觀光夜市、美食街等小型餐飲店衛生管理輔導成效

Investigation on the Sanitation Guidance of Food Services in Tourist Night Markets and Food Courts, 2012

摘要


本研究為101年度觀光夜市、美食街等小型餐飲店衛生管理輔導計畫,選定桃園國際機場美食街、台中逢甲夜市、高雄六合夜市及宜蘭羅東夜市做為輔導對象,總計輔導139家業者。輔導方式以食品良好衛生規範(GHP)為依據,制定從業人員衛生管理、環境衛生、器具與設備衛生、原物料管制、製程與品質管制等五大項目,做為衛生自主管理指標。經現場輔導後,評核118家觀光夜市及美食街等小型餐飲店,其中95家業者通過評核,總計通過評核的比例為80.5%,99至101年累計共有246家業者通過評核。本計畫期望藉由輔導方式加強業者落實衛生自主管理,以期提升我國餐飲衛生水準及觀光夜市的經營形象,並保障民眾之飲食安全。

In year 2012, Taoyuan International Ariport Food Court, Taichung Fengjia Night Market, Kaohsiung Liuohe Night Market, and Ilan Luodong Night Market were selected for the Sanitation Guidance Program, and a total of 139 food services were examined. Based on the principles of Food Good Hygiene Practice (GHP), we have developed five keys for hygienic self-control, including food handlers management, environmental sanitation, sanitary facilities and utensils, raw materials control, preparation and quality control. The results showed that a total of 95 food services in tourist night markets and food courts passed the inspection in terms of environmental sanitation, the percent of pass being 80.5%. Additionally, a total of 246 food services passed the inspection during 2010 to 2012. Overall, this program was aimed to implement hygienic self-control system in food services, in order to enhance the sanitation standard of food services and the image of the tourist night markets, and also to ensure the food safety for consumers.
