摘要


在貴州多個少數民族中,有著種類繁多的酸味食品,這些酸味食品中,不但有多種製作保存這些食物的傳統知識和地方性知識,而且還擁有一些酸味食品習俗,以及一些關於食品安全傳統智慧。這些,不但是世界民族飲食文化的一個組成部分,而且其習俗與食品安全的關係在其中有許多驚人的表現,也會給予今天的飲食文化全球化潮流一定的啟示。

There are many varieties of sour foods among many minority peoples in Guizhou province. These sour foods not only contain much traditional knowledge and local knowledge about food production and preservation, but also some customs about sour food and conventional wisdom on food safety. They are not only a part of the world food culture, but can also give inspiration to the globalization of the food cultures today, due to their amazing performance in food safety.
