營養生長期提早斷水對稻米品質之影響

Effects of Early Intermittent Drying during Vegetative Growth Stage on the Quality of Rice

摘要


本試驗目的在探討水稻營養生長期間,提早斷水晒田對水稻生育及稻米品質之影響。1993年二期作及1994年一期作在台中區農業改良場試驗田進行田間試驗。比較稉稻臺農67號、臺中189號及秈稻臺中秈10號對提早斷水之反應。試驗結果顯示二期作提早斷水晒田,可以顯著提昇白米之完整米率及透明度,並降低心腹白含有率及粗蛋白質含量;對糙米品質則可以有效降低酮裂粒、有色米及屑米之含量,但卻顯著提高未熟粒之含量。一期作提早斷水晒田,可以降低心腹白含有率、粗蛋白質及直鏈性澱粉含量,但同時亦降低完整米率;對糙米品質則可以有效降低酮裂粒,但卻提高未熟粒、有色米及屑米之含量。品種之間以秈稻台中秈10號對提早斷水之反應較穩定,提早斷水對台中秈10號之米質沒有影響。稉稻台農67號與台中189號對提早斷水之反應較敏感。二期作提早於插秧後25~28天斷水晒田可以提高完整米率及降低未熟粒;一期作提早於36~40天斷水晒田可以降低直鏈澱粉含量,降低酮裂粒及屑米率,均有助於提昇米質。

Field experiments were conducted from the fall of 1993 through the spring of 1994, on Taichung District of Agricultural Improvement Station, to investigate the effects of early intermittent soil drying on the growth and quality of rice. Three rice cultivars, Tainung 67, and Taichung 189 of Japonica type, and Taichung sen 10 of Indica type were used. Treatments of soil drying to 0.06 Mpa moisture tension were practiced at 30, 40, and 45 days on the spring, and 20, 25, and 35 days on the fall after transplanting, respectively. The results showed that intermittent drying practiced at early growth stage in the spring crop significantly decreased white belly of brown rice, and also the crude protein, amylose contents, and head rice of milled rice. On the fall crop, early intermittent soil drying increased head rice percentage and decreased the white belly and crude protein content of milled rice, thus improved quality of rice. Early drying the soil also decreased fissure and cracked kernels, colored rice and screenings of brown rice.Taichung sen 10 showed a better stability than Tainung 67 and Taichung 189 while imposed to early soil drying. Early soil intermittent drying showed no effects on quality of Taichung Sen 10, while drying the soil from 25-28 days after transplanting promoted head rice and reduced immatured kernels on the second crop. Drying the soil from 36-40 days after transplanting on the first crop reduced amylose contents, fissure-craked and immatured kernels, and screenings of rice.
