以毛細管電泳分析食品及產品中添加之醣類

摘要


食物、健康食品甚至是中草藥等等皆含有豐富且多樣的醣類,這些醣類中有些可能具有特異之功能性,因此需要可以定性定量多種醣類的可靠方法。本研究針對此目的,利用毛細管電泳成功建立三種快速、穩定且低廉的分析方法,包含PMP (1-phenyl-3-methyl-5-pyrazolone)衍生、APTS (8-aminopyrene-1,3,6-trisulfonate)衍生及間接偵測方法。藉由整合此三種方法,共可偵測分析22種單醣類。此研究建立之方法可以做為常規檢驗食品中所含醣類之參考。

Food, healthy food and even herbs are rich in variety of carbohydrates and some of these carbohydrates may have specific functionalities. A reliable method to qualitative and quantitative analysis of various carbohydrates is required. For this purpose, this study using capillary electrophoresis successfully established three fast, stable and cheap methods of analysis, including PMP (1-phenyl-3-methyl-5-pyrazolone) derivative, APTS (8-aminopyrene-1,3,6-trisulfonate) derivative, and indirect methods. Through combinational usage of these three methods, at least 22 kinds of carbohydrates can be analyzed. This established methodology can be applied to routinelyinspectcarbohydrates in foods and products.
