從文化角度看中國飲食習俗

Chinese Dietetic Habits as seen from the Cultural Point of View

摘要


本文描述了中國飲食習俗在觀念文化、制度文化、心態文化諸領域中的種種表現,指出了中國飲食文化在中國文化中的重要地位。文中還評介了飲食習俗的四大特徵,即歷史特徵、地域特徵、群體特徵與傳承、變異特徵。並探討了中國飲食習俗的兩個特點,即平實、富於理性的特點與注重儀文、文采的特點。中國飲食習俗多如牛毛,舉不勝舉。本文只就與歐美飲食習俗有顯著區別的數點,並以歐美飲食習俗為參照系加以評介。包括主副食制度、食制習俗、烹飪習俗、進食間趨吉避害之習俗、歲時節日禮儀典人生禮儀所體現的飲食習俗。

The paper discusses various manifestations of Chinese dietetic habits in terms of concept, system, psychology and so on. It illustrates the important position of Chinese dietetics in Chinese culture. The paper also summarizes four prominent features of Chinese dietetic habits, namely, that of history, geographical location, colony, and of inheritance and diversity. The article then goes on to explore two characteistics of Chinese dietetic habits: practicality and rationality, convention and literary grace. There are tremendous variations in Chinese dietetic habits. This paper only reviews a few of the habits that are distinctly different from that of European and American ones, and comments on them as against the European and American habits. The discussion includes staple and subsidiary food systems, eating habits, culinary art, the custom of expressing only auspicious sentiments but avoiding all negativeous at the dinner table, etiquette during festivals and New Year's days, and etiquette of behaviour.
