臺灣酵素製造業之研究

摘要


國內農產品存在著「產銷失衡」、「品質保存不易」 和「食安問題」長久以來一直是農政單位面臨的棘手問題。 台灣人民普遍生活水準提高,越來越多人注重養生與預防保健。如果能結合「有機農產品」與「生物科技發酵技術」將營養價值高的「新鮮蔬果」與「機能性農產品」開發成能適合長期保存且高附加價值的「酵素保健食品」。除了可以調節生產失衡或產量過剩,鼓勵上下游計畫式生產,協助農民提升農產品的附加價值、拓展國內銷售通路和國際外銷的可行性。並且可以為農政單位調節產銷問題。同時也可以將傳統農產品提升為養生保健領域,是非常值得鼓勵發展的健康產業。 酵素的生產製造是一個「跨專業領域」的產業。其上、中、下游的供應鏈,非常需要各種領域的專業人才投入與配合,方能順利生產出讓消費者信賴的優質產品。 目前國內酵素製造業者在「前端培菌技術」、「生產設備」、「發酵製程模式」、「產品檢驗」都缺乏業界標準,嚴重影響酵素產品品質認定。因此市面上的酵素產品品質好壞差異頗大,消費者也無法從產品的外觀、包裝分辨出品質的優劣。 酵素在製造過程每個細節如果稍有不慎,就很可能產生「食安問題」的「劣質酵素」,這樣對整體產業的傷害性頗大。容易造成「劣幣逐良幣」的業界反淘汰現象,甚且嚴重影響整體酵素產業的發展。 本研究將探討「臺灣酵素製造業」的整體「上、中、下游供應鏈」每個環節的重要相關因素,並且分析酵素產業的「發展現況與瓶頸」,提供產、官、學、研相關單位與未來有意進入酵素製造產業的新進業者實質「建議」。快速掌握整體產業供應鏈之「關鍵因素」。期許能開創造「有機農業」、「酵素製造業者」、「消費者」及「管理者」多贏之局面。

Domestic agricultural products have been suffering from "unbalanced production and sales", "quality is not easy to maintain" and "food safety problems" have long been a thorny issue for rural economic units. The general standard of living of the people of Taiwan has increased, and more and more people are paying attention to health and preventive health care. We can develop "green fruits and vegetables" and "functional agricultural products" with high nutritional value in combination with "organic agricultural products" and "bio-technical fermentation technology" into "enzyme health foods" that are suitable for long-term storage and high added value. In addition to regulating production imbalances or oversupply, it encourages upstream and downstream project-based production, assisting farmers to increase the added value of agricultural products and expand the feasibility of domestic sales channels and international exports. And it can adjust the production and sales issues for the agricultural administrative units. At the same time, it is also possible to promote traditional agricultural products into the health care field, which is a health industry that is very worthy of encouragement. The production of enzymes is a "cross-professional" industry. The supply chain of the upper, middle and lower reaches of the company is in great need of professional talents in various fields to cooperate and cooperate in order to produce high-quality products that consumers can trust. At present, domestic enzyme manufacturers lack industry standards in "front-end culture technology", "production equipment", "fermentation process model" and "product inspection", which seriously affect the quality certification of enzyme products. Therefore, the quality of the enzyme products on the market is quite different, and consumers cannot distinguish the quality of the products from the appearance and packaging of the products. If every detail of the enzyme in the manufacturing process is slightly inadvertent, it is likely to produce "inferior enzymes" of "food safety problems", which is quite harmful to the overall industry. It is easy to cause the industry to eliminate the "bad money and good money", and even seriously affect the development of the whole enzyme industry. This study will conduct an in-depth study of the important factors related to each link of the "Taiwan Enzyme Manufacturing Industry" in the "upper, middle and lower supply chain", and analyze the "development status and bottlenecks" of the enzyme industry, providing production, government, learning, Research the relevant units and the new "initiatives" of new recruits interested in entering the enzyme manufacturing industry in the future. Quickly grasp the "key factors" of the overall industry supply chain. It is expected that we will create a win-win situation for "organic agriculture", "enzyme manufacturers", "consumers" and "managers".
