臺灣酵素製造業之研究

國內農產品存在著「產銷失衡」、「品質保存不易」和「食安問題」長久以來一直是農政單位面臨的棘手問題。台灣人民普遍生活水準提高，越來越多人注重養生與預防保健。如果能結合「有機農產品」與「生物科技發酵技術」將營養價值高的「新鮮蔬果」與「機能性農產品」開發成能適合長期保存且高附加價值的「酵素保健食品」。除了可以調節生產失衡或產量過剩，鼓勵上下游計畫式生產，協助農民提升農產品的附加價值、拓展國內銷售通路和國際外銷的可行性。並且可以為農政單位調節產銷問題。同時也可以將傳統農產品提升為養生保健領域，是非常值得鼓勵發展的健康產業。酵素的生產製造是一個「跨專業領域」的產業。其上、中、下游的供應鏈，非常需要各種領域的專業人才投入與配合，方能順利生產出讓消費者信賴的優質產品。目前國內酵素製造業者在「前端培菌技術」、「生產設備」、「發酵製程模式」、「產品檢驗」都缺乏業界標準，嚴重影響酵素產品品質認定。因此市面上的酵素產品品質好壞差異頗大，消費者也無法從產品的外觀、包裝分辨出品質的優劣。酵素在製造過程每個細節如果稍有不慎，就很可能產生「食安問題」的「劣質酵素」，這樣對整體產業的傷害性頗大。容易造成「劣幣逐良幣」的業界反淘汰現象，甚且嚴重影響整體酵素產業的發展。本研究將探討「臺灣酵素製造業」的整體「上、中、下游供應鏈」每個環節的重要相關因素，並且分析酵素產業的「發展現況與瓶頸」，提供產、官、學、研相關單位與未來有意進入酵素製造產業的新進業者實質「建議」。快速掌握整體產業供應鏈之「關鍵因素」。期許能開創造「有機農業」、「酵素製造業者」、「消費者」及「管理者」多贏之局面。
