Previous studies in our laboratory have pointed out that the alcohol conversion rate of yeast is extremely high when low-density bacterial fermentation is performed, but strains that perform well at low density do not have high alcohol conversion rate as expected in high-density bacterial fermentation. Therefore, in order to search for strains with high fermentation conversion rate under high-density conditions, the screening method adopted in this experiment is a continuous liquid screening method for high-density bacteria, in order to find a strain that ferments well at high density.
