摘要 本研究旨在探討銀髮族對日本料理餐廳食品品質態度之表現,目的在瞭解銀髮族對日本料理餐廳食品品質的重要及滿意情況與關係,藉以提出不同策略以提供有關餐廳業日後經營之參考。研究方法採分層抽樣以在日本料理餐廳用餐銀髮族為問卷對象,及三家不同類型日本料理餐廳做為研究範圍,並運用描述性統計分析、重要性—表現(滿意)分析(Importance-Performance Analysis,簡稱IPA)來分析資料。研究結果發現餐廳業食品品質以「風味方面」、「 衛生方面」為最重要及滿意,並藉由「重要-滿意分析矩陣」 四個象限落點,繼續保持、供給過度、優先順序較低、加強改善,提出具體建議,提供給餐廳業者參考,加強管理以提高其競爭力。 關鍵字:銀髮族、日本料理餐廳、食品品質、IPA
Abstract The purpose of the study is to investigate the effects of the food quality in the Japanese restaurants for the elders. By exploring the relationship between the elders’ satisfaction and the food quality in the Japanese restaurants, diverse strategies are proposed for the related restaurants in the future management. The study recruited the elders dining in three different kinds of Japanese restaurants with stratified sampling. The collected data were compared by descriptive statistics and importance-performance analysis (IPA).The study results concluded that the taste and sanitation were the most important factor in satisfaction. Moreover, the four aspects of IPA were analyzed in keeping the stability, over supply, priority, and enhancing improvement. The suggestions were further proposed for the restaurant administrators to enhance the management and competency. Keywords: the elders, Japanese restaurant, food quality, IPA
