成人降低脂肪攝取營養教育成效評估研究

摘要


本研究之主要目的在於瞭解降低脂肪攝取營養教育課程對成年人降低脂肪攝取營養知識、態度、飲食行為及自我效能上的影響。研究者以行政院衛生署委託師大家政教育系發展之降低脂肪攝取營養教育課程-「減脂之旅」,在台北市大同公司及台灣電力公司兩處職場,針對年齡35歲以上的51名員工進行為期八週,每週四十分鐘之營養教育活動,於課程進行前、後一週及結束後一個月實施降低脂肪攝取營養知識、態度、飲食行為及自我效能的評量。研究結果發現:1. 「降低脂肪攝取營養教育課程」教學活動的實施對於成年人降低脂肪攝取營養知識、態度、飲食行為及自我效能上有增進的效果。2. 「降低脂肪攝取營養教育課程」教學活動後,對於女性降低脂肪攝取之營養知識、態度、食物選擇及自我效能上的教學效果顯著優於男性。3. 分析影響降低脂肪攝取營養知識、態度、飲食行為與自我效能之相關因素發現:營養知識對飲食行為之解釋及預測力大於對營養態度,但對自我效能則無顯著解釋及預測力。營養態度對自我效能之解釋及預測力則大於飲食行為。自我效能對營養態度及飲食行為皆具顯著解釋及預測力,而自我效能可能為營養態度與飲食行為間之中介變項。性別、年齡、教育程度及營養訊息關心度等背景變項對於降低脂肪攝取營養知識、態度、飲食行為與自我效能不具良好之預測及解釋力。由以上分析結果可知,僅增強營養知識並非增強營養態度及自我效能的良好方式,而增強營養知識、態度及自我效能皆有助於增強及維持飲食行為。

The purpose of this study was to assess the effects of reducing fat intake education program on improving adults’ reducing fat intake nutrition knowledge, attitude, behavior and self-efficacy. The researcher used the reducing fat nutrition education program –「A tour of reducing fat」develop by the Department of Home Economics Education in National Taiwan Normal University entrusted by Department of Heath of the Executive Yuan. The subjects cover 51 employees above 35 years old at Tatung Company and Taiwan Power Company in Taipei City. The program was designed to give one session per week lasting for eight weeks, the effects of intervention was assessed by 「Reducing Fat Intake Knowledge, Attitude, Behavior and Self-efficacy Questionnaire」 after eight sessions (protest) and one month follow-up (follow-up test). Results indicated that: 1. The nutrition education program significantly improved the subject’s knowledge, attitude, dietary behavior and self-efficacy. 2. Women’s knowledge, attitude, food choice and self-efficacy on reducing fat intake were significantly improved than men after the program. 3. Analyzing the correlation factors of reducing fat intake knowledge, attitude, dietary behavior and self-efficacy, the findings were nutrition knowledge could significantly predict dietary behavior than to predict nutrition attitude, but couldn’t predict self-efficacy. Nutrition attitude was a stronger predictor of self-efficacy than dietary behavior. Both nutrition attitude and behavior could be predicted by self-efficacy, it might be an intermediate variable between nutrition attitude and behavior. Demographic variables (sex, age, education and concern of nutrition information) weren’t important predictors of nutrition knowledge, attitude, behavior and self-efficacy. Judging from the above, enhance nutrition knowledge wasn’t a good way to improve nutrition attitude and self-efficacy, but enhancing nutrition knowledge, attitude and behavior will improve dietary behavior.
