北部某醫學中心員工之營養知識、營養態度與飲食行為相關因素研究

A Study on Nutrition Knowledge, Nutrition Attitude, Dietary Behavior, and Related Factors among Employees at A Medical Center in Taipei.

摘要


本研究為探討醫學中心員工之營養知識、營養態度與飲食行為現況,及個人背景因素對營養知識、營養態度與飲食行為之差異,並了解營養知識、營養態度與飲食行為三者相關性。 以北部某醫學中心員工為本研究的母群體,並採用分層集束抽樣法進行抽樣,以自編式問卷調查法進行資料收集,共取得359份有效問卷。研究資料採用描敘性統計、獨立樣本T檢定、單因子變異數分析、皮爾遜積差相關及複迴歸分析等統計方法進行分析,研究結果如下: 一、研究對象營養知識在食物之營養素答對率較高,而均衡飲食知識答對率則較低;營養態度在均衡營養部分較佳,而情緒性進食態度則較差;飲食行為在食物攝取頻率及份量較佳,而均衡飲食與進食技巧則較差。 二、個人背景因素以年齡、教育程度與職稱等變項對於營養態度與飲食行為具有顯著性差異。 三、關於營養知識、營養態度與飲食行為三者相關性,營養知識與飲食行為無顯著相關,營養知識與營養態度為正相關(p< 0.001),營養態 度與飲食行為顯示正相關(p< 0.001)。 四、個人背景變項與營養知識對飲食行為無法預測,而營養態度可有效預測飲食行為,並可達19.6%的預測力。 最後根據上述研究結果,提出建議供未來相關研究的參考。

This study is designed to investigate the nutrition knowledge, nutrition attitude, dietary behavior of employees at a medical center in Taipei and the differences of personal background factors on nutritional attitudes and dietary behavior, nutritional knowledge, and understanding of nutrition knowledge, nutrition attitude and dietary behavior between the three. The subjects of this study were the employees at a medical center in Taipei, and using the stratified cluster sampling method and self-made questionnaire survey, 359 valid samples were collected. The research data were analyzed by descriptive statistics, independent-samples T Test, one-way ANOVA, Pearson's correlation and multiple regression, results were as follows: 1.The nutrition knowledge of the subject was higher in the food, and thecorrect rate of the balanced diet was lower. The nutrition attitude is better in the balanced nutrition, but the Emotional eating attitude is poorer; the dietary behavior is better in the frequency and weight of food intake, while the balanced diet and eating skills are poorer. 2.Personal background factors with age, education and professional titles and other variables for nutritional attitude and dietary behavior were significantly different. 3.Although there was no significant correlation between nutrition knowledge and dietary behavior, nutritional knowledge and nutritional attitude(p< 0.001), whereas nutritional attitude and dietary behaviors ware positively correlated(p< 0.001). 4.Personal background and nutritional knowledge can not predict of dietary behavior, and nutrition attitude can effectively predict the dietary behavior, and the predictive power is up to 19.6%. The findings of this study provide the evidence for further studies.
