地方意象應用於航空餐具設計創作研究─以航空公司經濟艙餐具設計為例

摘要


隨著全球化時代的來臨,搭飛機往來全世界的頻率逐漸增高,航空產業競爭也會越來越激烈,而飛機上的餐飲服務也會成為航空公司主要競爭項目之一。航空業的餐點服務除了食物餐點衛生安全之外,餐具的設計也會影響到乘客用餐時的體驗。 航空餐具需配合航空公司的品牌化策略;因為使用的地點不同,餐具和一般居家的器皿使用不同,需兼具美觀、不占空間、好清理、質量輕盈,讓空服人員好收納及達到機動性的效率。本研究透過文化意象特色來了解航空業和餐具設計的關聯性,並使用九家航空公司餐具個案研究分析,再透過文化意象與航空餐具設計的關聯性,從中分析歸納出結論。由文化意象、器皿的特色、航空業的運作流程三者之間的關係,探討對於航空公司餐具設計的影響。本研究採用「文獻分析」與「個案研究」兩種研究方法,整理歸類其特徵與內涵,並從研究結果中發掘可提供創作航空餐具設計的元素。透過文化意象、文化符碼的分析、飲食文化與食器的關係、航空餐具的尺寸規格、使用者的角色等文獻研究,以及個案分析和實地觀察訪問,進而得到結論,藉著文化意象的山脈元素來進行一系列的經濟艙餐具模組創作,將其山脈的彎曲、鑲嵌、圍繞等特性呈現在產品當中。並融入台灣飲食的特色在餐點裡,讓乘客在享用航空餐點的時候,能夠體會到視覺與味覺的饗宴,再者希望能使在地精神展現在航空餐具當中,且帶給旅客在食用航空餐點時,可以瞭解其產品背後故事的意義。

With the advent of the era of globalization, the frequency of flights is gradually increasing, hence the competition in the aviation industry is getting fiercer, and the catering service on the aircraft becomes one of the major competitive elements for airlines. In addition to the food hygiene and safety, the design of the tableware in the aviation industry also affects customer experience. Aviation tableware design must cope with the airline's branding strategy. Because the food preparing methods and dining environment are limited, the tableware and the general household utensils are designed differently-- aviation tableware shall be with beautiful appearance, space-saving, easy-cleaning, light weight, so they are easy served and stored by flight attendants. The study is going to analyze the relevance of aviation industry and tableware design through cultural image features, and is going to take nine airlines as case study and then make conclusion through cultural imagery and aviation tableware design. The relation among cultural imagery, the characteristics of utensils, and the operational processes of the aviation industry is explored for the affection of airline tableware design. In this study, the two methods of "literature analysis" and "case study" are used to sort out the characteristics and connotations, and to explore the elements that affect the design of aviation tableware. The study is through cultural images, analysis of cultural codes, the relationship between food culture and tableware, the size specifications of aviation tableware, the role of users, and other researches, as well as case studies and field observation visits, and then draw conclusions, through cultural elements of the mountain to create a series of tableware modules, the characteristics of the mountain's bending, inlay, and surrounding are presented in the product. It included the characteristics of Taiwanese food in the meal when passengers enjoy the air meal. They can experience the feast of sight and taste. In addition, I hope to show the spirit of the place in the aviation tableware and bring Taiwanese spirit to all passengers. You can understand the meaning of the story behind the product when you have meals.
