摘要

本論文主要是探討現代飲食散文中的懷舊情感、歷史變遷、旅遊觸發與政治、情色的象徵意涵。綜觀飲食散文的書寫，絕大部分都與懷舊有關，不論歷史、文化、旅遊，幾乎都是在懷舊的基礎點延伸而出的。飲食是一種記憶的媒介，它可以帶領人們進入時光隧道，重溫過往的經驗；另外從飲食我們也可以歸納出政治飲食的話語及情色飲食的表徵。
因此飲食可以看成一種能指符碼，指射出各種面向的所指意義，藉著對飲食作家的文本分析，探討其背後呈現的飲食意涵。
由於飲食文學的文本很多，本篇論文主要將重心放在臺灣當代的飲食散文上，以其他文體及西方文學作品為輔。除頭尾緒論及結論外，正文共分四章：
第二章：探討飲食散文中的懷舊記憶，除了歸納各個作家的懷舊對象外，也比較作家間書寫方式的異同，並延伸出飲食文本的價值。
第三章：探討飲食散文中變調或變味的懷舊記憶，並探討現今仿古飲食所呈現的心理意義。
第四章：探討飲食散文的時空展演，包含從時間面向討論飲食在歷史文化及社會經濟遞嬗下留下的軌跡，及空間面向從異地飲食呈現的刺激與懷舊心理。
第五章：探討飲食的政治語言，並從飲食的需求性及象徵性凸顯飲食呈現的情慾需求。

The main studying in this discourse is about the articles - retrospective emotion, historical evolvement, sentiment during traveling, political symbolism and erotica symbolism, which are described in the neoteric proses of dietetics. Overview the dietetic proses, most contents are about retrospection, even the content describing history, culture or traveling is almost based on retrospection to develop. The diet is an inter-medium of memory, which takes humanity into a time tunnel and back to the past. From the dietetic view, in addition, we can also generalize the dietetic symbol of politics and the dietetic symbol of erotica.

Therefore, the diet can be treated as an association pointing to the meaning come from each way. Through the analysis of dietetic proses, we can learn the exact meaning behind the diet.

Since there are many dietetic proses, the studying in this discourse is focusing on the proses of Taiwanese neoteric dietetics and also referring to the other styles or the western literatures. Except the prolegomenon and the conclusion, the text is divided into four chapters:

Chapter I: Studying the part of retrospective memory in dietetic proses, not only generalizes the retrospective object of each writer, but also compares the difference between each writing style. Furthermore, the value of dietetics can be manifested through this studying.

Chapter II: Studying the part of inflected retrospective memory in dietetic proses and the psycho-meaning presented by the archaized diet.

Chapter III: Studying the part of spatiotemporal evolvement in dietetic proses, includes the chronological view – the diet tracks the evolvement of historical culture and social economy; and the dimensional view – the adventure and retrospection associated by the different cuisine.

Chapter IV: Studying the dietetic symbol of politics, the erotica requirement manifested by the dietetic need and symbol.
