美感經驗融入麵塑課程設計之研究

摘要


本研究旨在透過麵塑課程設計的實施與觀察,針對美感經驗與教育之養成進行初探。本研究主要採用「質性研究」及「行動研究」為研究取向,研究對象學生60人,皆為大學餐飲管理及廚藝系一年級學生,男生3人、女生6人,共9名,該9名學生皆自願受訪,並對其9名學生做深入訪談,學生背景分為二種身分,各為沒有美術課程經驗的學生4人以及有美術課程經驗的學生5人進行施測,課程實施過程中,進行評估與測驗,再由學生3次反饋單中反覆修正及省思,最後根據學習滿意度問卷調查進行成果分析。亦研究者在實際教學情境中,以面塑藝術為主題設計課程實施,進行美感領域與技術領域之相關課程。研究結果發現:(1)本課程實施中看到課前有受過美術或捏塑相關課程的學生,學習成效明顯優於沒有接受過美術或捏塑相關課程的學生 (2)學習滿意度問卷調查分析,學生透過課程實施肯定自我美感的養成及進步。

Abstract The present study focuses on the development of aesthetic experience and education through the implementation and observation of dough sculpting curriculum design. We employee qualitative research and action research to analyze the accomplishment of a course for 60 students in the Department of Food and Beverage Management and Culinary Arts. The in-depth interviews are conducted with nine students among these 60 students. Three of these nine students are men and six are women. Four of these nine students did not have art-course experience, while the other five had related experiences. We assess the aesthetic experiences of these nine students during the course implementation process. This assessment involves a calibration and reflection process repeating three times through a feedback form. Then, we apply the results from a satisfaction questionnaire regarding the learning process to analyze the performance of our curriculum design. In the real teaching sites, the researchers design courses focusing on dough sculpture art, and give aesthetics-and-technology-related lectures to the students. The present work finds that: (1) Students having experiences in art or kneading-related courses previously have significantly better performance than those who did not have related experience before the course; (2) The analysis on the satisfaction questionnaire reveals that the implementation of the course benefits the students in terms of the development and progress of self-aesthetic.
