高職餐飲管理科學生學習餐旅服務技術的學習態度與學習困擾之相關研究

摘要

本研究旨在探討不同背景變項之高職餐飲管理科學生學習餐旅服務技術的學習態度與學習困擾之情形。其主要目的為：（1）探討不同背景變項的餐飲管理科學生在學習餐飲服務技術時的學習態度之差異情形。（2）探討不同背景變項的餐飲管理科學生在學習餐飲服務技術時的學習困擾之差異情形。本研究採問卷調查法，其研究對象為中部某高職餐飲管理科學生，以分層隨機叢集取樣，有效樣本為703名學生，並以描述統計、t考驗、單因子變異數分析與典型相關。
研究結果顯示：（1）餐飲管理科學生學習餐旅服務技術時的學習態度與性別有顯著差異，尤其在學校因素造成困擾有顯著差異。（2）不同年級中，二年級學生的學習態度低於一、三年級的學生，且二年級學生有較高的學習困擾。（3）已取得餐服證照的學生對於學習餐旅服務技術在學習態度與困擾都有著差異。（4）考取餐旅證照的意願對於學生的學習態度及學習困擾都有顯著差異。（5）有門市餐廰打工經驗的學生對於學習餐旅服務技術時對課程態度有顯著差異。（6）家庭氣氛對於學生學習餐旅服務技術中對課程的態度有顯著差異，而在學習困擾中社會因素有顯著差異。（7）餐服成績對於學生學習餐旅服務技術中對課程的態度、未來生涯的態度都有顯著差異。（8）曾被當過經驗的學生對於學習餐旅服務技術中對個人的學習態度有顯著差異，而在學習困擾中學校因素有顯著差異。（9）餐飲管理科學生學習餐旅服務課程時的態度與困擾有相關性存在。

The purpose of the research is to investigate the influence of the food and beverage department at vocational high school on student’s learning attitudes and learning disturbances of hotel and restaurant service. Moreover, the study examined the relationships between student’s background variables and student’s learning attitudes and learning disturbances.
In order to get the informaiton above, a questionnaire is developed. The study contained 703 valid samples. Descriptive statistics and infernetial statistics are adopted to ananlyze the data. Descriptive statistics contains frequency distribution, percentage, mean, standard deviation, t- test, one way ANOVA and Canonical correlation.
According to the analys is the findings are as follows:
1. There are significant differences on student’s learning attitudes and learning disturbances among different genders , grades, licencese of service skill, working experience of server, experience of crash class of serivce skills and family atmosphere.
2. There is no significant difference on student’s learning attitudes and learning disturbances among parents’s education, parents’s occupasion, sequence of birth.
