創業精神之預警性、創新性及承擔風險之研究─以臺南地區Brunch餐廳創業家為例

摘要


臺灣以中小企業結構為主,其產業網絡密集、應變彈性高。Brunch在國外已盛行多年,最近在國內與日俱增,「Brunch」新概念正在蔓延。本研究以餐飲業為討論產業,餐飲業創業進入門檻低,創業家紛紛崛起。本研究將「創業精神(Entrepreneurship)」透過「預警性(Proactiveness)、創新性(Innovativeness)和承擔風險(Risk-taking)」三項構面呈現,提出研究目的一:何謂「Brunch創業家的創業精神」以及目的二:「創業精神」又是如何去影響Brunch創業家對於機會確認的判斷?採用主題分析法、紮根理論,透過個別深度訪談法,訪談臺南20位Brunch創業家,討論創業家是如何先馳得點、與別人與眾不同、以及面對風險的歷程。研究結論認為創業家除了本身的工作經驗與資源,舉出創業 須注意的相關事宜、六大風險以及其解決辦法。最後,本研究透過餐飲實務經驗提出創業精神新架構,以利於後人研究。透過創業家的創業歷程,希望讓更多中小企業主及員工參考,結合彼此知識的力量,再創中小企業經濟春天! 關鍵字:中小企業、Brunch、創業精神、主題分析法、紮根理論、個別深度訪談。

Small and Medium Enterprises is what Taiwan is based on, its industry network is compact and flexible. Brunch has been a popular concept, which made it increasing more popular among small businesses in recent years. This research is to discuss dining industries in Taiwan. Starting a business in the dining business has low threshold, entrepreneurs are on the rise. This research displays entrepreneurship through pro-activeness, innovativeness and risk-taking. The purposes of this research are as follows: First, what is brunch entrepreneurs’ entrepreneurship? Secondly, how entrepreneurship affect brunch entrepreneurs? Through Subject Analysis and Grounded Theory, by using Individual Depth Interview, and interviewing 20 of Tainan’s brunch entrepreneurs, discussing how they score first and become one of a kind, the process of facing risks. The research concludes that entrepreneurs should have not only their experience and resources, but also suggests things that should be cautioned, six major risks, and how to resolve them regarding entreprendre. Lastly, the research suggests a new model for entrepreneurship through observations of the restaurant business, which can be further researched by future scholars.Through the procedures the entrepreneur went through, we hope that more small and medium enterprise owners and staff to refer to, and through the combination of one another’s knowledge, create the economic spring of small and medium enterprise.
