臺中市國小高年級學生營養知識、營養態度及飲食行為之相關研究

Research on the Nutrition Knowledge, Nutrition Attitude, and Dietary Behavior of Elementary School Children at Upper Grades in Taichung City

摘要


本研究旨在了解目前臺中市國小高年級學生營養知識、態度和飲食行為之現況和三者間的關係,及探討不同背景變項高年級學生營養知識、態度和飲食行為的差異情形。本研究採用問卷調查法,以分層隨機抽樣方式抽取臺中市國小高年級學生,共發出650份,回收624份,有效問卷604份,有效問卷回收率96.7%。所得資料以描述性統計、t-test、one-way ANOVA、Pearson積差相關與多元迴歸等統計方法進行資料分析。經研究發現:(1)學生體重過重或肥胖比率偏高;(2)學生營養知識表現尚佳;(3)學生營養態度表現尚佳,但飲食行為表現相對偏低;(4)性別、年級、飲食類型、自覺成績表現、自覺體型、全家是否一起用晚餐等背景變項在營養知識上有顯著差異;(5)性別、年級、自覺成績表現、零用錢多寡等背景變項在營養態度和飲食行為上均有顯著差異;(6)營養知識、營養態度和飲食行為三者彼此間呈正相關;(7)營養態度對飲食行為具有預測力。最後依據結果提出結論與建議。

The purpose of this study was to understand nutrition knowledge, nutrition attitude, and dietary behavior of elementary school children at upper grades in Taichung city and the basic variables of the relationship among the above. This study used the questionnaire method, 96.7% questionnaire recovery rate, 604 effective questionnaires. The valid sample subjects, 650 elementary school children at upper grades in Taichung city, districts with a stratified random sampling method. And t-test, one-way ANOVA analysis, Pearson’s correlation and multiple regression method was used to analyze the collected data. Our research discovered that (1) The overweight or obesity rate was high. (2) Students’ nutrition knowledge was positive. (3) Students’ nutrition attitude was positive but dietary behavior was relatively low. (4) The different "genders", "graders", "diet type", "schoolwork consciousness", "figures consciousness" and "eat dinner together" had the significant difference in students’ nutrition knowledge. (5) The different “gender”, “diet type”, “the amount of pocket money” and “schoolwork consciousness” had the significant difference in both students’ nutrition attitudes and dietary behaviors. (6) There was a positive correlation among The nutrition knowledge, nutrition attitude and eating behavior. (7) The nutrition attitude was predictor for eating behavior. Proper nutrition education and intervention are required for the improvement of elementary school children''s nutrition knowledge, nutrition attitudes and dietary behaviors.
