This paper aims to design and analyze the heat recovery system of refrigeration and air-conditioning (AC) equipment built in local chain restaurants. From the field measuring and monitoring data, the hot water temperature becomes lower when lots of water is used in the restaurant, but the water temperature around 45℃ is satisfactory to the staff in the kitchen. We not only improve the deficiencies such as power consumption, stability of supplying water temperature and safety of the electric heating water systems in the past, but could save the initial cost of the equipment for the owners. Based on the estimated quantity of the used hot water each day, the owners can save at least NT$ 150,000 electricity bill and return of investment (ROI) is about one and a half years.
