本研究旨在探究當前我國技專校院餐飲服務技術課程實施時,教師之教學信念融入是否有所差異,以及其相關聯性程度。再將統計分析所得出之結果,與授課教師做一訪談,期盼能找出最適切之課程內容與教學方法。其相關結論如下: 現行技專校院餐飲服務技術教師對於課程實施具有正向傾向。 現行技專校院餐飲服務技術教師對於教學信念具有正向傾向。 教學信念能有效正向預測餐飲服務技術課程一貫實施之影響能力,其解釋整體餐飲服務技術課程一貫實施的變異量為64.3%。 餐飲服務技術課程一貫實施與教學信念呈現正相關情形;而其中以「教學內涵」對課程實施整體層面相關情形最高,以「學習差異」對課程實施整體層面相關情形最低。 個人背景變項不同之教師在餐飲服務技術課程一貫實施上會有顯著差異。 個人背景變項不同之教師在餐飲服務技術課程一貫之教學信念上會有顯著差異。
This study aims to explore whether teacher’s teaching beliefs differs and its level of correlation when implemented in food and restaurant technical courses in current Taiwanese Vocational Technical Schools. In addition, it analyses the statistical results and interviews its instructors. The purpose of the research is to obtain the most appropriate courses and teaching methods. The results are shown as follows: The teachers of food and restaurant service in current Vocational Schools have a positive tendency towards the implementation of technical courses. The teachers of food and restaurant service in current Vocational Schools have a positive tendency towards the teachers’ beliefs. Teaching beliefs can positively predict the influence on technical courses of food and restaurant service, and its variance of overall interpretation on courses of food and restaurant service is 64.3%. The technical courses of food and restaurant service is positively correlated with teaching beliefs; and in which the "teaching connotation" has the highest correlation towards the implementation of overall courses. Nevertheless, "learning differences" has the lowest correlation towards the implementation of overall courses. The teachers of different personal background have significant differences in consistently implementing technical courses of food and restaurant service. The teachers’ beliefs of different personal background have significant differences in consistently implementing technical courses of food and restaurant service.
