持證廚師對衛生講習課程學習滿意度與學習成就之研究

摘要


本研究旨在瞭解目前持證廚師的學習滿意度及學習成就相關因素之探討。本研究採用問卷調查,研究工具為參考相關文獻後自編之「持證廚師對衛生講習課程學習滿意度與學習成就之研究調查問卷」進行資料蒐集,以持證廚師為研究對象,共回收有效問卷386份,有效問卷回收率為74.09%。以次數分配、百分比、平均數、標準差、t檢定、單因子變異數分析、典型相關等統計方法來進行分析。 研究結果發現,不同性別持證廚師在人際關係與技能部分構面有顯著差異;在年齡方面以35歲以上人際關係優於35歲以下;在教育程度方面國小以下教育程度顯著優於各個教育程度持證廚師;在入行年資中呈現無顯著差異;以平均單日工作時數,多數構面皆具有顯著差異;在就業機構類別變項中以一般餐廳在課程與教材優於學校餐廳及醫院餐廳;另外在持有合格廚師證年數來看以持證愈久,學習滿意度與學習成就也就愈佳;在工作地區以中部地區學習滿意度及學習成就居後。此外從第一組典型變量的典型權數中,發現持證廚師學習滿意度層面上如果課程教材、師資與教學、學習環境及人際關係越不好時,其學習成就層面中的認知、情意、技能部分也就越差;而在第二組典型變量的典型權數中,發現持證廚師學習滿意度層面上如果人際關係越不好時,其學習成就層面中的情意也就越差,即表示人際關係與情意呈現正相關。

This purpose of this study was to explore about learning satisfaction and learning achievement on food sanitation lectures of chef owns certificate of culinary. To following the food sanitation lectures exhibition, 386 chef s who owns certificate were asked to fill in a questionnaire. The responding rate was 74.09%. This study had the following finding from their background. Chefs with different gender, age group, level of education, average working hours pre-day, category of occupation, holds certificate of culinary by chef and working area these of factors had significantly different on learning satisfaction and learning effectiveness. On the other side, seniority had no significantly different on it. According to the research, female had significant different on interpersonal intelligence and psychomotor. Chefs who had different age also had different interpersonal intelligence, especially above 35 years old. On level of education, well-educated does not means higher learning satisfaction and learning achievement. From category of occupation, as we can see normal restaurant had significantly different than school restaurant and hospital restaurant on matters for teaching. The research show owns the certificate of culinary lasting, also can be higher learning satisfaction and learning achievement. On working area, chef had significant different beside the middle part of Taiwan. Moreover, the data was analyzed by correlation between interpersonal intelligence and affective.
