摘要


本文以問卷調查方式了解消費者之豬肉消費行為及意向。問卷調查的結果包括:國人習慣至傳統市場購買溫體豬肉;會至超級市場購買豬肉的主要原因為選購時間較具彈性;在多項有關豬肉的考量因素問題中,價格的影響力都居於末位。利用問卷調查資料,進一步分析可能影響豬肉消費支出及未來購買進口豬肉等行為之因素。影響豬肉支出的顯著因素在α=5%下有:食品消費支出、至超級市場購買豬肉的次數、家中7-18歲成員人數、居住家中成員人數、經濟戶長的年齡與教育程度。為了解影響未來是否會購買進口豬肉之因素,採用logistic模型以最大概似法估計,結果為:在α=5%下,對進口消費意向有顯著性正向影響的變數有食品支出和購買豬肉時以外觀為優先考量之因素,而愈優先考慮外觀因素者,則購買進口的機率愈小,負向影響的有:與其他肉類比較、購買豬肉之原因以價格為優先考量,而愈優先者購買進口豬肉之機率愈大。

Questionnaire survey is conducted in this study to reveal consumers' behavior and tendency of pork consumption in Taiwan. The results of the questionnaire survey including the following: 1. Most people are still used to purchase moderate-temperature- pork from traditional markets. 2. Time flexibility is the major reason of purchasing pork from supermarkets. 3. In most of the questions, price is the last concern among all the pork purchasing factors.Data from questionnaires is further analyzed by Engel function analysis to discuss the factors that influence the behaviors of pork consumption and purchasing import pork in the future. The significant factors (under α=5%) that in fluence pork consumption includes the following: 1. Food consumption of a family. 2. Frequency of purchasing pork from supermarkets. 3. Number of the family members between age 7 and 18. 4. Number of the family members living together. 5. Main family income earner's age and education level. Maximum likelihood estimation of logistic model is applied to further analyze the factors that influence import-pork consumption in the future. The results under α= 5% are as follows. 1. The food consumption positively influence the probability of purchasing import-pork. 2. The greater the concern of the pork outlook in purchasing pork, the less the probability of purchasing import-pork. 3. The greater the concern of pork price in purchasing pork, the greater the probability of purchasing import-pork.
