以參照單位分析法探討家庭外食之餐廳選擇因素

摘要


外食選擇餐廳是家庭經常要面對的消費決策問題;由於必須考量家庭成員的需求,使得決策變得較為複雜。本研究以問卷調查方式蒐集資料,採用便利抽樣方式挑選台中市某一所國中具有家庭外出用餐經驗之學生家長參與問卷填答,共計獲得654份有效問卷。調查資料應用參照單位分析法(Ridit)將家庭外食選擇餐廳的重視因素進行排序,則是發現:26項因素根據其重視程度可分為五類,其中以餐食新鮮及餐食衛生最為重要。除此之外,根據所計算的R數值排序則是發現:餐飲服務方面,較重視服務人員本身的服務態度與處理問題能力;用餐環境方面,較重視用餐環境與廁所的清潔度;受訪者對於停車方便的重視程度高於價格合理;對於餐廳的口碑/評價及兒童服務方面並不重視。更進一步分析顯示:消費者因其排行最小的子女年齡、個人平均消費金額及家庭年收入的不同,對於家庭選擇餐廳因素的重視程度排序不同;亦即這些變數對於家庭選擇餐廳具有影響性。不同消費族群的受訪者,最為重視的餐廳選擇因素雖大多相同,但其順序卻有不同,並顯示出共同最基本的需求在於餐食新鮮衛生與用餐環境乾淨整潔。本研究根據研究結果,除了提供未來後續研究方向與建議之外,並提出實務建議供業者在餐廳經營管理之參考。

The primary objective of this research was to explore food-away- from-home (FAFH) consumer behavior in terms of the selection factors for restaurant. A convenience sampling using a self-administered questionnaire was completed by family restaurant patrons. In total, 654 usable responses were obtained. The approach of Ridit analysis was used to analyze the data. The most important factors were food fresh and sanitary. Except that, based on the R values, the respondents regarded “staffs’ service quality” and “handling of complaints” as important factors. They also laid emphasis on “dining environment” and “cleanness of rest rooms”. The parking facilities had received more their attention than the factor of price/value. However, it was found that word-of-mouth/evaluation and facilities for children were the least important factor. The further analyses indicate the differences in the choice preferences under the influences of the age of the youngest child, the average expenditure per family member and the annual family income level. The theoretical implications are discussed. The analytical results are also useful for foodservice industry in developing operational strategies.
