研究目的為瞭解台灣北部地區民眾保健食品的消費情形,保健食品消費者特徵,以及認知度、接受度及營養知識的相關性。 本研究針對台灣北部地區各縣市民眾,包括基隆市、台北縣、台北市、桃園縣/市、新竹縣/市等地區,20歲以上成年人,進行保健食品的認知、接受度及營養知識相關性之問卷調查。研究測量工具,包含個人背景資料、保健食品的認知程度、消費經驗、營養知識等之結構式問卷,回收有效問卷共451份。 本抽樣研究調查結果:台灣北部地區民眾之食用保健食品比例約佔51%。台灣北部地區民眾保健食品消費者特徵為年齡較高(41~50歲)、已婚、營養知識較高者,食用保健食品比例較高。保健食品消費者與非消費者其認知度與營養知識均沒有顯著相關性。保健食品接受度預測因子為年齡、婚姻狀況、營養知識三者,可達10.9%預測力。營養知識預測因子為性別、教育程度、食用與否,可達8.3%預測力。
The objects are to understand consumption situation of Adults in Northern Taiwan, characteristics of people who are taking healthy food and the relationship of regulation awareness, acceptability of healthy foods and nutritional knowledge. Northern Taiwan is target areas of the study, including Keelung, Taipei county, Taipei city, TaoYuan county/city and ShinJu county/city, and the subjects are the adults aged 20 years above. To explore the relationships among awareness, acceptability of healthy food and nutritional knowledge by questionnaire investigate. The implement of the study is structural questionnaire, including demographic characteristics, awareness of healthy food, consumption experiences and nutritional knowledge. Total quantity of effective questionnaire retrieved is 451. The study indicated that about 51% of adults in northern Taiwan reported taking healthy food. The characteristics of the consumers in northern Taiwan are older age (41~50 years old), married and higher scores in nutritional knowledge. The correlation of awareness of healthy food and nutritional knowledge for healthy food and non-healthy food consumers are both not statistically significant. The predict factors for acceptability of healthy foods are age, marriage situation and nutritional knowledge, total predict strength is 10.9%. The predict factors for the nutritional knowledge of consumers are sex, educational level and consumption of healthy food, total predict strength is 8.3%.
