急凍食安風暴:冷凍食品調理產業新未來

摘要


本個案是冷凍食品調理K公司在2014年9~10月份,受到國內食用油食安事件波及下,造成了公司有形與無形的損失。為此探討K公司在面臨食安議題衝擊下,所採取之各項因應策略,觀察個案如何「急凍」食安風暴對公司造成的影響。從個案一開始的對外聲明書,之後事件急轉直下發展,不慎捲入食安風暴,到後續對外處理機制,以及公司內部如何穩定軍心的過程,尋找再生能量重新出發。本個案以冷凍食品調理業者角度出發,包括以下重要議題:1.食品業者應具備哪些企業道德與社會責任思維?2.食品業者之利害關係人角色為何?對於食品業者有何衝擊?應對利害關係人採取何種因應對策?3.食安事件將造成食品業者哪些層面的影響?最後再加以應用到個案內部之因應策略,並提供相關業者因應之參考。透過撰寫個案內容重建實境氛圍,實際描述當時時空背景、情境以及對話內容,藉使讀者理解個案內容當時所遭遇之困境、問題,其及糾結矛盾、心亂如麻的心境;同時藉由內容引導出相關理論分析,包括歷年食安事件、企業道德、社會責任、利害關係人等進行深入探究。

During September to October in 2014, Taiwan food industry faced a dramatic crisis about the food safety. The focal case is company K in frozen food manufacturing industry. To discuss what strategies should be taken when the company faces food security crisis. How to ?Frozen? the impact of food security crisis on the company? Enterprises must have ethical thinking, and the gradual implementation and promotion which can contribute to long-term sustainable business. Based on this case, focus on the following issues: 1. What kinds of ethical thinking and social responsibility should be noticed in the frozen food industry? 2. What are the roles of the stakeholders in the frozen food industry? The influence of the stakeholders on the frozen food industry? Frozen food industry should take what kind of the responding strategies to those stakeholders? 3. The impact of food security crisis on the firms in the frozen food industry? This case re-built the reality about the atmosphere that time and provides evidences let readers to understand the situation and discuss the business ethics, social responsibility, stakeholders in this case.
