本研究以大台北地區宴會廳工讀生爲研究對象,探討工作環境知覺、工作滿意度與服務品質之關係。經深入訪談,萃取題項輔助現成量表,旨在希望本問卷能更切合餐飲業宴會廳工讀生。針對大台北地區國際觀光旅館宴會廳及一般宴會廳之工讀生爲施測對象,總共各發出800份問卷,實得有效問卷512份。研究結果顯示,工作環境與工作滿意度、服務品質均存在顯著正相關;工作滿意度與服務品質存在顯著正相關;工作滿意度對於「工作環境與服務品質之間」中介效果的假設是成立的。餐飲產業大部分的研究著重在顧客或正職員工層面,較少將重點著重在工讀生的研究上,期望透過本研究的探討與分析,對未來宴會廳業者在管理及聘用工讀生時有所助益。
This study is aimed at exploring the relationship among working environment, job satisfaction and service quality. After conducting a thorough interview, a questionnaire is made to support the existing measuring scale. The purpose is to use the survey to better cater to the banquet part-time employees. By targeting the part-time employees of the international hotel and ordinary banquet halls in the greater Taipei region, this study distributed 800 questionnaires and received 512 valid questionnaires back. The finding of the research indicates that the working environment is significantly positively correlated with job satisfaction and quality service; job satisfaction is significantly positively correlated with quality service; and proves the assumption of the intermediate effect between <||>Job satisfaction and quality service<||>. So far, most of the restaurant industry studies emphasize the perspective of customers and employees, but do not focus on the study of part-time employees. It is expected that the discussion and analysis of this study can help the banquet business regarding future management and the recruitment of part-time employees.
