《本心齋疏食譜》之飲饌意義探析

摘要


《本心齋疏食譜》是南宋時期的著名食譜,也是南宋文人飲食的代表作,其有別於前代食譜之處,除了具備實用的饌餚製法,亦將審美、修養、情趣等與文人相關的生活文化統合在一起,成為一種集中體現士大夫價值的飲食文獻。審視該書,可發現其內容雖然單薄,製法粗略簡易,但從其序跋與贊語,卻可發現其具有相當深厚的人文意涵。一直以來,《本心齋疏食譜》在作者、書名與著述年代上就存在一些疑義,本文擬對此先作一些考訂,再就其內容、格式體例與飲饌特點加以探討,以明其在飲饌文學史上的意義與價值。

”Benxizhai Shu Shi Pu” is a renowned cookbook in the Southern Song Dynasty, as well as the representative diet writing of literati in the same period. Unlike the cookbooks in the former dynasties, in addition to offering practical cooking tips, this book also integrates aesthetics, cultivation and delight with the life and culture of literati. It became a diet literature embodying the value of literati. The review on this book shows that, although the content and cooking skills are simple, the preface, postscript and compliments reflect abundant cultural implications. There have always been doubts over the author, book title and era of completion of ”Benxizhai Shu Shi Pu”. This study intends to investigate this book by probing into its content, format and diet characteristics to understand its meaning and value in die literature.
