高中職餐飲管理科學生校外實習之探討

A Study on the School-outside Internship Problem of Hospitality Vocational High School Students in Taiwan

摘要


本研究從高中職餐飲管理科學生參與校外實習時所產生的問題做分析,以內容分析法分析西元2000年至2008年間有關高中職餐飲管理科校外實習之國內博碩士論文與中文期刊,經由問題分析量化矩陣分析發現高中職餐飲管理科學生校外實習問題爲人際適應、觀念認知、職場工作能力、實習工作態度、實習衝突與實習機構問題等六方面。研究者從學校、業界及政府等產官學方面建議學校可多鼓勵教師寒暑假至業界研習,以縮短學界與業界間技術上的距離。教學上,教師應訓練學生自我角色調整的方法,並將餐旅職務的特殊性整合至班級討論中,藉由邀請業界人士到校演講、增加業界參訪課程、舉辦學長姐實習分享座談會以增進學生對業界實習的認知。業界方面,建議實習單位透過實習前的面談,了解學生的實習意願、興趣及專長,分發至適當的單位實習,並採輪調的方式,賦予並教導實習生技術性與多元化的實習工作,而設置獨立出來的實習輔導老師專責處理學生實習問題有其必要性。最後建議政府教育單位建立證照與學歷轉換制度,鼓勵學生實用知能的學習以破除升學迷思,並且在有關建教合作法令中列校外實習專章,邀請專家學者參合作企業選取工作,並評估業界與學校、學生簽訂的契約書內容,明訂雙方合理規範。

This research was to treat the school-outside Internship problem of hospitality vocational high school students in Taiwan. The researchers conducted documents content analysis to analyze domestic theses and dissertation and Chinese journals from 2000 to 2008. Through the problem analysis table, the school-outside Internship problem of hospitality vocational high school students included interpersonal relationship and adaptation、notion and perception、career ability、internship attitude、conflict with internship and the problem of cooperation organization. The researchers offered suggestion to school、industry and educational government about school-outside internship program that hospitality institutes could encourage teachers to be an intern in hospitality industry during summer and winter vacation, to abbreviate the technical gap between academic and industry. In teaching aspect, the teachers should train students how to adjust the role play, and integrate the specific characteristics of hospitality position into the class discussion. Inviting hospitality experts to give a lecture, increasing industry visiting courses, and holding a senior sharing discussion meeting was also good ways to further the students' cognition. Hospitality industry should make an interview before internship to understand the students' will, interests, and expertise, to place the students in appropriate department. It should also work shift, teaching and endowing with technical assignment to make the work abundant. In addition, it was necessary to hire an independent intern instructor to specialize in internship program. At last, the educational government could establish certificate and academic degree conversion system to encourage students in practical skill learning to break the myth in getting a higher education. Besides, it should make a practicum regulation in the cooperation education ordinance, and invite experts to select cooperative industry and evaluate the contract between industry, hospitality institutions, and students to make the reasonable standard.
